What are vegetarians supposed to do on national braai day later this month?
"They can stand and watch," said Archbishop Desmond Tutu on Tuesday, as he poked a large steak with his braai tongs.
But seriously we do eat some veggies with the braai, see below for some wicked ideas:
Garlic Potatoes
Steamed Braai Veggies
Roasted Vegetables
Braai'd Butternut
 

Garlic Potatoes

Ingredients:
Baby potatoes
Head/s of garlic-separated into cloves
Tin foil
Blossom light margarine(animal product free)

Method:
Place about 5 potatoes, with a dollop of margarine and a handful of the garlic cloves into tinfoil packages.
Place on coals
Leave until tender and delicious.

Steamed Braai Veggies

Ingredients:
500g Potjiekos potatoes washed
2 Packets fresh mushrooms washed
1 Packet pattie pans washed
4 Medium onions sliced
4 Medium tomatoes diced
Herbs of your choice
Salt and pepper to taste
Oil

Method:
Take about a meter of heavy duty foil and line a baking tray with one edge of the foil.
Oil tge bottom of the foil to cover the foil.
Add veggies, spices and herbs .
Close the contents with overlapping foil.
Fold the edges of the foil twice to seal the contents. Make sure that the foil does not tear. Lay the baking tray on the grid and cook for about 1 to 1 1/2 hours.

Tip: To prevent that the meat from going cold while you wait for the veggies, put the veggies on before you start the meat.

Roasted Vegetables

Ingredients:
Butternut peeled and cut into cubes
Baby marrow, cut into 2cm pieces and then halved
Red, green and yellow peppers - de seeded and cut into chunks
Onion cut into quaters
Mini corn
mushrooms
Carrots cut into 2cm pieces cut in halves
Olive oil
Garlic
Ina Paarman's olive and rosemary spice

Method:
Pre heat oven to 200 degrees
Put all the vegetables into a roasted tray drizzeled with oil and herbs and toss well
Put on middle shelf and cook until the butternut is soft.

Hint : don't over crowd the tray otherwise it tends to stew rather then bake

Braai'd Butternut

Ingredients:
1 x large butternut
1 x tbls Olive oil
1 x tsp Origanum or Rosemary
Salt & pepper to taste

Method:
Skin the butternut
Slice butternut into disks
Mix other ingredients together
Marinade the disks in mixture for 15 min
(can be marinated the day before)
Braai the butternut till soft
